Jim Jam Cookies
Ingredients
- Flour: 200g
- Baking Powder: 3g
- Butter: 120g (Room temp)
- Baking Soda: 2g
- Custard Powder: 8g
- Milk Powder: 10g
- Strawberry Jam: 75g
- Milk: 30ml
- Icing Sugar: 100g
Method
Step 1: Cream the sugar and butter
Step 2: Keep going till the butter and sugar have combined and become fluffy. This process takes about 5-10mins
Step 3: Add milk gradually and keep mixing
Step 4: Sift all the dry ingredients in a separate bowl
Step 5: Add the dry ingredients in parts to the wet ingredient mixture and fold
Step 6: Portion into even sized balls, flatten a little and place on baking sheet or silpat
Step 7: Make a small hole in the center for the jam
Step 8: Pipe strawberry jam in the center
Step 9: Bake at 170C for 18-20 mins
