Crumbly Peanut Butter Cookie
Ingredients
- Butter: 30g
- Brown sugar: 65g
- Caster sugar: 50g
- Vanilla: 1 tsp
- Egg: 1
- Baking powder: 1 tsp
- Flour: 175g
- Peanut butter: 150g
Method
Step 1: Whisk the butter and the peanut butter together in a bowl
Step 2: Add the vanilla essence
Step 3: Add the white and brown sugar
Step 4: Add the egg and whisk again
Step 5: Add the baking powder to the flour
Step 6: Add the dry ingredients to the butter/sugar mixture
Step 7: Use a spatula to form a dough (or if you prefer go in with your hands)
Step 8: Wrap the dough in cling film and refrigerate for about 30 minutes
Step 9: Remove from the fridge, form into balls and flatten. Place them on a baking tray and into the oven at 180°C for about 15 mins and then enjoy!
