Brown Butter Sponge Cake



Ingredients

  • Yogurt : 200g 
  • Flour : 200g 
  • Castor Sugar : 100g
  • Butter : 120g 
  • Baking soda : ½ tsp 
  • Baking powder : 1 tsp 
  • Milk : 30 ml 

Method

Step 1- Soften the brown butter 
Step 2- Add caster sugar to the brown butter and whisk well 
Step 3- Add yogurt to the butter and sugar mixture 
Step 4- Add flour and mix well 
Step 5- Add a little milk to the batter and make it even smoother 
Step 6- Cut and fold ( mix the batter well ) 
Step 7- Pour the batter to the baking tray and bake at 180c for 30-35 minutes 
Step 8 - Remove the sponge from the tray once it is baked and cool 
Step 9- Enjoy! 

    If you don’t know how to make Brown Butter, here’s what you need to -

    • In a pan on medium heat, add 140g butter (we have added 20g extra to account for loss of moisture)
    • The butter will start to bubble and turn a nutty, brown colour - stir occasionally
    • Pour the mixture through a sieve and let cool

    Alternatively, you can also do this in the microwave, stirring every 30 seconds till the butter is nutty and brown and then follow the same steps.

      In the first step, it says ‘soften the brown butter’. What do you mean by this? After I’ve browned the butter, the butter is in liquid form. It doesn’t solidify again. Is that an error or am I not understanding something? Or perhaps did you mean cool down the butter after its browned? Would really appreciate the help
